
This Lemon Garlicky Butter Bean Pasta is the kind of meal that feels effortlessly luxurious while coming together in less than 10 minutes. Silky, bright, and deeply comforting, it’s the perfect midweek dinner when you want something nourishing without spending hours in the kitchen.
Quick, cozy, fresh, and full of flavor — with absolutely no compromise on taste.

3 garlic cloves, finely sliced or minced
2 tablespoons extra virgin olive oil
1 can Italian butter beans, drained and rinsed
6 oz pasta of choice – wheat, chickpea or buckwheat
1 pint of cherry tomatoes, halved
Juice and zest of 1/2 lemon
2 large handfuls arugula
Salt and black pepper, to taste
Optional: red pepper flakes for heat
Optional: freshly grated parmesan or vegan parmesan to serve

For an easy weeknight dinner and an extra resistant starch boost for gut health, cook your pasta the day before or during your Sunday meal prep. Boil until just par cooked (slightly firmer than al dente), then reserve ½ cup of the pasta water before draining. Allow the pasta to cool completely and store in an airtight container in the fridge.
Bring a small pot of water to a boil to reheat the pasta.
To make the sauce, heat olive oil in a medium skillet over medium heat.
Add the cherry tomatoes and cook until they begin to soften and burst.
Add garlic and cook for 1–2 minutes and stir in the butter beans and allow to simmer for 1-2 mins.
Season with salt, pepper, and optional red pepper flakes.
When sauce is ready dinner, drop the chilled pasta in the boiling water for about 1 minute — just enough to heat through.
Drain and add the warmed pasta to the skillet along with a splash of the reserved pasta water, lemon juice, and lemon zest. Toss everything together until glossy, silky, and coated in the lemony garlic sauce.
Fold through the arugula just before serving so it gently wilts into the warm pasta. Finish with extra black pepper, parmesan if using.
