Chocolate Pudding

1 cup milk of choice (coconut for creaminess, soy for extra protein)
2 tbsp raw cacao powder
3/4 tbsp psyllium husk
1 tsp cinnamon
1/2 tsp vanilla extract
2 dates (pitted)
Maple syrup or raw honey (if you prefer sweeter))
1 tsp almond butter (optional – leave out for nut-free)
Pinch of sea salt
Raw cacao nibs (to top)

Add all ingredients to a blender

Blend until smooth and creamy (1–2 minutes)

Pour into a jar or bowl right away – it sets up very fast

Chill for 10–15 minutes.
